You may want to look for a culinary textbook, like I long ago quit buying recipe books and bought only technique books. Used prices demonstrate how in demand it is. If you want to get really serious and develop a wide repertoire, see Pepin's He demonstrates the flexibility you need to adapt to what you have to work with, and he doesn't often have mystery moments where he comes back and some important step is done. Jacque Pepin's series, Fast Food My Way, has him talking through good basic meals. If you want to break away from recipes one day, you will be making those decisions. I like America's Test Kitchen episodes for new (and old) cooks, because they usually explain their logic and choices. The Flavor Bible is good for experienced cooks, but it doesn't really get you through a dish. If there are specific kinds of cuisines you're interested in, you'll be better served by sources that specialize in that cuisine or in making it for western audiences (presuming you're coming more from that sort of tradition with access to typical equipment and ingredients in western cooking).
